Leftover Chicken Lentil Taco Soup – Leels Cooks

I know the obvious answer to “what to do with leftover taco ingredients?” is to make more tacos, but sometimes I like to switch it up. I’m a huge fan of challenging myself by trying to find something entirely different I can make up with whatever ingredients I have on hand. I had made burrito/taco rice bowls last night and thought I would throw together an easy soup out of the leftovers. You can do this with a lot of different meals so feel free to get creative with it. I’m trying to eat more plant-based food lately. I know I know, ew. But I’d like to live longer and maybe have a slightly less detrimental impact on the environment, so maybe eat a bean sometime. (Legume didn’t work well with the joke) This recipe is shockingly delicious, easy enough, and can be turned into meatballs, burgers, meatloaf, or even veggie ground if you want. Lentil Bolognese – Leels Cooks

I don’t eat enough lentils even though I love them. They’re such a useful protein source and make THE BEST meatloaves/meatballs. This is an offshoot of one of my older recipes: The Best Lentil Meatballs with a few adjustments, feel free to try that recipe as well, it’s great! And if you do, you can always just sub leftovers from that into this recipe. You can make this recipe vegan if you want, either omit the cheese or if you can find a vegan cheese that melts/caramelizes well use that! The cheese just adds a layer of flavour and fat but … Read more
