One Pan Orecchiette with Spicy Italian Sausage and Asparagus – Leels Cooks

I’ve gotten more requests for one pan meals so I threw this together inspired by something similar I’ve had before. A hearty pasta meal that you can throw together in about 20 minutes, that you can customize a few ways depending on preference/available ingredients. At the end of the post I’ll include some substitutions for inspiration! Be sure to use low sodium chicken stock and season at the very end as the liquid will reduce significantly and you can overdo it with the salt! What you need: 8 oz spicy or sweet italian sausage, removed from casing 2-3 cloves garlic, … Read more

Blueberry Lavender Hand Pies – Leels Cooks

Are you into floral flavours? I could never get into rosewater, but I’ve always loved lavender. It pairs beautifully with berries, and if you can find Dry Soda brand they make a lavender seltzer that goes incredibly well with gin ;). You can find lavender flowers for cooking most places now, I found mine in Harris Teeter in their own brand of spices. If you can’t find any locally amazon is your best friend! And honestly, if you wanna skip it entirely there’s nothing wrong with delicious blueberry handpies without! What you need: Crust: 1 1/2 cups all-purpose flour … Read more

Watermelon, Mint, and Feta Salad – Leels Cooks

I LOVE watermelon. I can eat it endlessly, and it’s the most delicious and refreshing thing. This is a riff on a salad my mom likes to make, the most important bits are really some sort of green, ripe sweet watermelon and feta. You can take it in any direction you like, I serve mine with a lemon vinaigrette but a balsamic reduction, red wine or raspberry dressing also go very well! It’s the best thing during this summer heat! What you need: 2 cups ripe watermelon, cubed 3-4 cups arugula 1 mini cucumber sliced (about 1 cup) 1 small … Read more

ABLT Sandwich with Grainy Honey Mustard – Leels Cooks

I’m not the biggest sandwich eater, but there’s one thing I crave outside of banh mi, and that’s a good ABLT with gorgeously ripe heirloom tomatoes.  My version has toasted sourdough bread, arugula and a grainy honey mustard spread. You could technically call this an ABLA because arugula actually isn’t from the lettuce family but we’re going to just go with this, ok?! 😛 The bitterness of the arugula works very well with the sweetness from the tomatoes and honey mustard resulting in a perfectly balanced sandwich. Make sure you get good quality thick cut bacon, and the ripest tomatoes … Read more

Vietnamese Style Rice Vermicelli Bowls – Leels Cooks

This is a simple meal we’ve been enjoying frequently this summer because it’s quick to throw together for lunches or dinner and is refreshing and low effort in the summer heat. This is not an authentic or traditional recipe, just a version that’s accessible and easy to make wherever you might live. Feel free to swap out the protein for whatever you’d enjoy best. It’s a great way to use up leftovers and give new life to them! If you’re going full vegetarian, swap the fish sauce  for soy in the nuoc cham. It won’t be perfect, but it’ll still … Read more

Rosemary Garlic Romano Cheese Chickpea Fries – Leels Cooks

It’s another super long name but it’s yummy.Have you ever had polenta fries? This is a similar method but instead with chickpea flour. These don’t really taste like chickpea, more like the airiest, crispiest potato croquette you’ve ever had. I add in rosemary, garlic and romano cheese but you can absolutely customize these in any way you’d like. Swap out the spices/herbs, another dry hard cheese would work fine just be mindful of the ratio. Enjoy as an appetizer, snack or as a new side dish! This makes enough for 4 large servings What you need: 4 cups water 2 … Read more

Chicken Katsu Onigirazu – Leels Cooks

If you like sushi or onigiri, you’ll like onigirazu! Just a different iteration of similar ingredients, pretty much a sushi sandwich surrounded by nori. These are easy to make and the varieties are limited only to what you can think up. I’ve been making these for my husband’s lunch bentos and quick lunches for myself. You can absolutely prepare these the night ahead as well, but I wouldn’t go any further, rice and refrigeration don’t play nice together unfortunately. This takes some effort and I’ve included the instructions on how to make the chicken, but it’s completely acceptable and encouraged … Read more

Lavender London Fog (Earl Grey Tea Latte) – Leels Cooks

I keep talking about these on instagram, along with drinking way too many lately, so I figured I’d just post about them! While I have seen a few variants nearby, they’re a lesser known thing around here in NC. Said to have originated in Vancouver BC (my hometown!)  They’re just a sweetened earl grey tea latte, and a popular variant is with the addition of lavender. Some recipes for this call for vanilla extract but since most extract is flavored alcohol I don’t enjoy it in drinks. If you have vanilla coffee syrup like Torani makes, that’s a much better … Read more

Cheese Stuffed Pretzel Bites – Leels Cooks

When it comes to food weaknesses, soft pretzels are up there for me along with anything potato related and bubble tea. I make a  lot of quickly thrown together yeasted breads like this, and while it may seem daunting I encourage you to give them a try. They’re not as complicated as you think! I stuffed these with a higher moisture buffalo mozzarella, feel free to use any cheese you like, considering that the more moisture, the more likely they’ll explode/leak about in the oven. It’s all part of the experience though, and the nicer cheese you use, the better … Read more

Char Siu Pork (Chinese BBQ pork) – Leels Cooks

I make this recipe quite often and have it in my featured highlights on instagram but I figured it was time to get it up here! I like to make two whole pork tenderloins worth and freeze it in portions for fried rice, bao, ramen or whatever else! This recipe has NO red food colouring because I feel it’s unnecessary, and it’s red *enough* anyway. It shouldn’t be difficult to find the ingredients for this one nowadays but if you’re struggling, the most prominent flavours are hoisin and chinese five spice. You could omit everything but that and still get … Read more
