Mom’s Pierogi – Leels Cooks

Perogie? Perogi? Pierogi? I still have no idea how to actually spell it but it’s been an important part of our family for years. You cannot have a family dinner or visit anyone without them being there. Everyone loves them, and they’re gone in an instant. As with every passed down family recipe, I have no clue how to actually measure anything in this. It’s all done by taste, feel and a few shrugs. So, bear with me, be brave and give it a shot. What you need: Filling: yukon gold potatoes (1 1/2 lb) HAS to be. My mother … Read more

Sesame Miso Soba with Crispy Tofu – Leels Cooks

Let’s pretend summer is here already so we can eat all of the cool, refreshing and light foods, okay? OKAY?! I’ve also been making a lot of unintentional vegetarian meals lately, not sure why, not unhappy about it though. As long as it’s delicious, no complaints! Feel free to sub out any of the vegetables with your favourite, and you can also sub the tofu for any other protein you’d prefer. Shredded rotisserie chicken would go very well with this. What you need: 1/2 brick of firm tofu, cubed 2 sleeves of soba noodles 1/2 cup cucumber, thinly sliced … Read more

Almond Biscotti – Leels Cooks

I’m not a fan of overly sweet cookies or dessert, so these were perfect. Crunchy, subtly sweet, perfect with a tea or coffee! Recipe adapted from: Nonna’s Biscotti Ingredients: 1 cup sugar 1 stick unsalted butter, melted 3 tablespoons brandy (didn’t have brandy, used scotch, couldn’t tell) 1 teaspoon pure vanilla extract 1 cup whole almonds with skin, lightly toasted, cooled, and coarsely chopped 3 large eggs 2 3/4 cups all-purpose flour 1 1/2 teaspoons baking powder 1/4 teaspoon salt Stir together sugar, butter, brandy, and vanilla in a large bowl, then stir in almonds and eggs. Eggs in a Pizza Basket – Leels Cooks

We don’t need a recipe for this. You just need to see this and know it exists. Those of you that follow my instagram know that I have a thing for eggs. Straight up #yolkporn. If I can put an egg on it, I will. Two, even. This was just one of those cases 😀 I like putting an egg ON pizza, but I find either making it separate or baking it on top of already baked pizza doesn’t really go as well. So this was my solution. Make eggs in a basket, but with pizza. Easy peasy. Try it … Read more

Spicy Maple Korean Fried Chicken Pancakes – Pancake Day – Leels Cooks

It’s Pancake Day! Apparently Canadians are supposed to celebrate this as well but I’ve never <_< I make and eat pancakes pretty often so I wanted to do something different. Since chicken and waffles are a thing, as are chicken and pancakes. I thought I could bring my own twist to this 😀 Fluffy pancakes with, sweet, sticky, spicy chicken on top – trust me you’re going to love this. Pancakes: I always use the martha stewart pancake recipe, it’s easy, basic and never goes wrong. 1 cup all-purpose flour, (spooned and leveled) 2 tablespoons sugar. 2 teaspoons baking powder. … Read more

Best Granola Bars EVER – Leels Cooks

This took some serious testing but I’ve finally got a great recipe for perfectly chewy and customizeable granola bars! Adapted from this recipe that I really wanted to love but they were a little too hard and kind of uncomfortable to eat. You can absolutely make this your own, feel free to swap out ANY of the nuts/dried fruit/mix ins, or even the nut-butter for something you prefer! What you need: 2 cups old fashioned rolled oats 1/2 cup puffed millet (or any puffed grain) 1/2 cup raw untoasted nuts, roughly chopped (I used almonds here) 1/4 cup honey 1/4 cup butter 1/4 … Read more

Lemon Bars – Leels Cooks

I was craving something lemony and sweet, and decided it was time I threw together some lemon bars. This is a super simple recipe that anyone can make, so give it a try! Not pictured here is the rest of the pan I fumbled with and broke into a million pieces, which is now a very delightful lemon crumble. ¯\_(ツ)_/¯ It still tastes good! Just have to eat it with a spoon now instead. What you need: Crust: 2 sticks unsalted butter 1 1/2 cups all-purpose flour 1/2 cup organic cane sugar (granulated is fine) 1/4 teaspoon kosher salt Filling: 2 cups organic cane sugar … Read more

White Sandwich Bread – Single Loaf – Leels Cooks

I love baking bread and do it often. I rarely ever have the 5-8 billion cups of flour required for most bread recipes, not to mention different flour types, so here’s a simple recipe to make ONE loaf of bread. Not two, not three, not whateverthehell amount of bread people keep developing recipes for. What you need: 1/2 cup warm water 1 tsp active-dry yeast 1 tbsp unsalted butter 1/2 cup milk 1 tbsp sugar 1/2 tbsp salt 3 cups flour   Add the yeast to the water and get that activating, either in the bowl of a stand mixer … Read more

Leftover Chicken Lentil Taco Soup – Leels Cooks

I know the obvious answer to “what to do with leftover taco ingredients?” is to make more tacos, but sometimes I like to switch it up. I’m a huge fan of challenging myself by trying to find something entirely different I can make up with whatever ingredients I have on hand. I had made burrito/taco rice bowls last night and thought I would throw together an easy soup out of the leftovers. You can do this with a lot of different meals so feel free to get creative with it. (creative means throwing random things into a pot and hoping it … Read more
