We are creatures of habit when it comes to buying fish and an easy way to take the pressure on the most popular species to look at using some delicious alternatives which are not on any environmental watch list. Our wild caught market fish of the day always makes use of alternative species such as Gurnard.
Gurnard are proving very popular in our retail section. For years they were thrown back or used as bait for fisherman but people have now realised that they make great eating and an economical choice.
Lime & Garlic Gurnard
Servings: 3 People
Cost: $23
- 500 Gram Gurnard Fillets
- ½ Cup Plain flour
- 3 Cloves Garlic, minced
- 1 Tbsp parsley, finely chopped
- freshly ground black pepper
- salt
- 1 fresh lime
- olive oil for pan frying

Season and coat fish fillets with garlic, salt, freshly ground black pepper and parsley.

Place flour on a plate then lightly roll fish fillets on it coating them lightly.

Prepare a non-stick pan, heat a small amount of olive oil. Once olive oil is hot enough, pan fry the gurnard fillets for 3 minutes on each side or until fully cooked.

Place fish on serving platters then drizzle lime juice.
