Just a quick little recipe that you can make your own! I wanted to make my granola bar recipe but I have no brown sugar so I thought a simple, light-er granola would be good. This is mildly sweet, warmly spiced and crunchy! Feel free to sub out any of the nuts/seeds/dried fruit/fat with anything you prefer, just keep the amounts the same.
What you need:
- 4 cups oats
- 1/2 cup slivered almonds
- 1/4 cup sunflower seeds
- 1/4 cup pumpkin seeds
- 1/4 cup pistachios
- 1/2 cup dried cranberry
- pinch salt
- 1 tbsp apple pie spice
- 1/4 cup honey
- 1/4 cup unsalted butter, melted
Preheat oven to 350 F, and line a large baking sheet with parchment.
- Combine all ingredients except for the dried fruit and mix, pour over baking sheet and bake 30 minutes, stirring halfway. Keep an eye on this near the 25 minute mark as it can start to brown/burn quickly near the end. Everyone’s oven is different so play it by ear!
- Remove and mix in your dried fruit, allow to cool completely before packaging. Store in a mason jar or large zip-top bag.
**NOTE** If you have pre-toasted nuts that look pretty dark already, feel free to add them once the granola is OUT of the oven, otherwise you can burn them or over-toast them. Same goes with adding a lot of dried fruit, sometimes raisins or other dried fruit can get overly dried/chewy in the oven, so add them at the end! Enjoy!
