Lentil Bolognese – Leels Cooks

I don’t eat enough lentils even though I love them. They’re such a useful protein source and make THE BEST meatloaves/meatballs. This is an offshoot of one of my older recipes: The Best Lentil Meatballs with a few adjustments, feel free to try that recipe as well, it’s great! And if you do, you can always just sub leftovers from that into this recipe. You can make this recipe vegan if you want, either omit the cheese or if you can find a vegan cheese that melts/caramelizes well use that! The cheese just adds a layer of flavour and fat but … Read more

The Telltale Sign You Overmixed Your Chocolate Mousse

BartTa/Shutterstock You’re hosting a dinner party with friends. You’ve gone all out — a beautifully presented charcuterie platter, a Mediterranean meze plate. Then the mains of beef bourguignon, homemade sourdough, and haricot verts. And, to close out the meal — the best-ever chocolate mousse. You’ve decided to tackle this French bistro classic by yourself. A traditional chocolate mousse recipe can be made ahead of time, and with a bit of know-how, you should be able to handle it, right? It’s rich, yet light, and doesn’t need much aside from spoons and maybe … Read more

Meal Prep – Taco Alfredo Pasta – Leels Cooks

I wanted to share my favourite meal-prep recipe that I make weekly that’s been keeping me sane. It’s not one of those hyper “clean” recipes or anything, but it has whole wheat pasta, lean protein, broccoli and it’s approx 350 calories per serving. It is comforting and filling which is all I can really ask for as a frequent binge eater and deep lover of carbs. Personally,  I find I’m so much more successful when I meal prep in a realistic sense. No absolutes, no extreme restriction or deviation from what I would normally eat. Focusing on lower calorie/workarounds to … Read more

Can You Sous Vide A Frozen Steak?

Lucie Zarecka/Shutterstock There are few things more mouthwatering in this world than a perfectly cooked steak. Unfortunately, cooking the perfect steak at home can sometimes be challenging, especially if you’ve forgotten to take the meat out of the freezer. Although you can cook steaks frozen, the process can be tricky to get right as the inside will take longer than the outside to get done, potentially resulting in overcooking and a tough steak. Of course, instead of grilling a frozen steak outright, you can try the sous vide method. If you’ve never … Read more

Greek Chicken One Pan Dinner – Leels Cooks

One pot/sheet pan meals have been on my blog “to-do” list for a while, I asked on instagram what people wanted to see and was asked to make one so here we are! There are a million similar recipes to this, but this one is my version. I tried to make it in as few steps as I could, but still trying to allow each ingredient to shine. Sometimes one pan meals meld together a little too much and everything is a bit samey. Tender savoury potatoes, juicy herbed chicken and some bright roasted vegetables topped with feta. Lots of … Read more

How Many Shots Of Espresso Are In One Pound Of Coffee?

Parilov/Shutterstock A lot of people measure their coffee by how caffeinated it gets them, but if you’re trying to plan ahead, it helps to know how many shots of espresso you can get out of a bag of beans. A standard shot of espresso is usually about 1 ounce, and depending on the barista or coffee machine, it takes 6 to 8 grams of ground coffee to make an espresso. Generally, if you’re buying a pound of coffee (which is 16 ounces), you can expect to get 64 shots of espresso out of it.  There are … Read more

Carrot Cake Blondies – Leels Cooks

I had the craziest craving for carrot cake (probably from all of these blogs posting Easter recipes) so I decided to throw together one for myself. Not a cake-cake because I didn’t want to fuss with layers and have that much. Just a denser blondie type batter with all the flavouring and carrots required. Feel free to add raisins or swap the pecans for walnuts. What you need: 1 cup unsalted butter, melted 1 1/2 cups light brown sugar 1 egg + 1 egg yolk 1 cup finely grated carrot 1 1/2 cups all purpose flour 1 tsp baking powder … Read more

Can You Toast Coconut In An Air Fryer?

Arina P Habich/Shutterstock Be it cream, oil, or milk, coconuts are like chameleons that can take on many forms. Whether you spoon the meat directly from the husk for a beachy snack or extract its water for a potassium-rich post-workout beverage, there’s no wrong way to enjoy this tropical fruit. One of the most versatile forms, however, is shredded coconut. A sweet, warm, and nutty addition that can be sprinkled into both sweet and savory dishes, shredded coconut tastes even better when it’s toasted, and the easiest way to achieve this at … Read more

One Pan Orecchiette with Spicy Italian Sausage and Asparagus – Leels Cooks

I’ve gotten more requests for one pan meals so I threw this together inspired by something similar I’ve had before. A hearty pasta meal that you can throw together in about 20 minutes, that you can customize a few ways depending on preference/available ingredients. At the end of the post I’ll include some substitutions for inspiration! Be sure to use low sodium chicken stock and season at the very end as the liquid will reduce significantly and you can overdo it with the salt! What you need: 8 oz spicy or sweet italian sausage, removed from casing 2-3 cloves garlic, … Read more
