I’m not the biggest sandwich eater, but there’s one thing I crave outside of banh mi, and that’s a good ABLT with gorgeously ripe heirloom tomatoes. My version has toasted sourdough bread, arugula and a grainy honey mustard spread.
You could technically call this an ABLA because arugula actually isn’t from the lettuce family but we’re going to just go with this, ok?! 😛 The bitterness of the arugula works very well with the sweetness from the tomatoes and honey mustard resulting in a perfectly balanced sandwich.
Make sure you get good quality thick cut bacon, and the ripest tomatoes you can find.
This makes enough for two hefty sandwiches!
What you need:
- 4 large slices of sourdough bread, toasted
- 1 tbsp mayonnaise
- 1 tbsp grainy mustard
- 1 tbsp honey
- 8 slices thick cut smoked bacon, cooked
- 2 medium heirloom beefsteak tomatoes, sliced to 1/2 cm thickness
- 1 medium avocado
- 1-2 tbsp lemon juice
- salt and pepper to taste
- 1 heaped cup of arugula
- In a small bowl combine mayonnaise, grainy mustard, and honey. Spread a thin layer on each slice of bread.
- Mash avocado with lemon juice, salt and pepper to taste and spread onto one half of each sandwich. Lay tomatoes over avocado side in a single layer.
- Add 4 slices of bacon to each sandwich and top with arugula. Gently close sandwich and slice into halves.
